Farmers Market dinner

I just discovered the blogger app on my smartphone . so let's see how much of this post I can speak instead  of actually sitting down to type. Maybe I will actually be more regular with posting not that anyone actually read this.

Today was one of those great stay at home mom trying to start a fledgling home based business  kind of days.

On our way home I stumbled across a farmers market that I didn't even know what's happening in our town all summer. The produce was so fabulous and fresh it still had dirt as if it had just been picked.

I should have taken pictures but sofie was running around and I had to keep ur from jumping into the fountain at the town center where the farmers market was being held.

the actual farmer was there selling his product  and was so helpful and courteous I just couldn't help myself from buying  a little bit of everything. Food with color is my favorite, so I have always loved eggplant. My  husband and petulant teenager not so much.

So I had to find a recipe where the eggplant would be hidden.
